  • 2 cups rolled oats
  • 1/2 cup peanut butter can substitute with almond or sunflower seed butter
  • 1 1/4 cups banana, mashed use ripe bananas
  • 1/4 cup zucchini, shredded squeeze out moisture
  • 1/2 cup chocolate chips semi-sweet or dark

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x9 inch baking dish or line with parchment paper.
  3. In a large mixing bowl, combine rolled oats and any additional dry ingredients.
  4. In another bowl, mash ripe bananas and mix with peanut butter and shredded zucchini.
  5. Pour the wet mixture into the dry ingredients and mix until just combined.
  6. Fold in chocolate chips until evenly distributed.
  7. Spread batter into the prepared baking dish and bake for 25-30 minutes.
  8. Let cool for 10 minutes before transferring to a wire rack. Cut into squares and enjoy!

Notes

  • Squeeze out moisture from shredded zucchini to avoid soggy bars.
  • For a vegan option, use a flax egg instead of peanut butter.
  • Add honey or maple syrup for extra sweetness if desired.
